Nick Green from the Green Butcher in Twickenham says: We dry cure in small batches and then the bacon is gently smoked over apple wood by Justin from Loch & Stock in Twickenham. Because we are making bacon with the loins and bellies of pork, that also means that for the first time we now have pork ribs for sale! Spare ribs and baby back ribs….

Subtle on the palate, with a delicate overplay of spices and a beautiful, rich creaminess from the coconut milk. The chicken was rich and succulent, and perfectly cooked in the sauce.
